Following an interview with François, we have selected for you a few tips and tricks.

Among the products that you are proposing, which one is your favorite?

F: It is hard to not talk about the Lantern. It’s our first baby, the first beer officially release from our gallons. And today, it’s the one I drink the most. It’s a good introduction to our universe without being too elitist. It’s a dry and aromatic beer with a delicate balance, perfect in all the circumstances. Otherwise, we are very selfish at the brew time. We only brew beers that we want to drink ourselves. So they are all our babies, and we love them all.

In your opinion, which beer will be the best to go with a meal based on scampi?

F: Soleil. A light and delicate beer. The cereal and hop side will marry very well with the iodine of scampis. After that, it depends on the seasonings and the sauce. If too present, it might wash away the fine taste of the Soleil. The light acidity from wheat (45% of malting assembly) will also marry nicely with seafood.

With what kind of food do you advice the “théorème de l’empereur”? And the “Noire du Midi”?

F: I will advise to do the opposite of what is expected. Which means, serve the Noire du Midi as an appetizer or entrée and the Théorème as a dessert. The Noire du Midi and oysters for example, will be great. The roasted and dry taste of this beer perfectly matched with the iodized freshness of an oyster. For dessert, the Théorème will be great with a cake with orange blossom. Indeed, jasmin and orange blossom do wonderful things in the month, and with the texture of a supple cake, it’s perfect.
